It look us way longer than necessary to realize how to edit entries in Gravity Forms.
Part of the reason is because for the most part, Gravity Forms is a WordPress Plug-in that is only used for Lead Generation and Contact Forms.

You can use it for powering math-based applications with graph and chart visualization, or quizzes with various scores and and results based on calculations of points.
So you can see, for many of these uses, why it may be useful to actually edit an entry as an admin in Gravity Forms.
